Spicy Chicken or Meat Stew

Ingredients
- 5-6 pieces of boneless chicken or meat
- 1 medium onion
- 2 tins of tomatoes
- 1 can of chicken stock
- 3 tablespoons of oil
- Salt
- Pepper
- Garlic
- Curry powder
- Bay leaf
Steps
- Steam meat or chicken as desired, fry and set aside
- Fry chopped onion until it softens
- Add tomatoes, salt and pepper
- Cover to simmer for 20 minutes
- Add chicken or meat, and stock and bring to boil
- Cover to cook in low heat for about 30 minutes or until meat or chicken is tender and stew looks a little thick.
Can be served with rice, potatoes, yams, etc.
