Groundnut (Peanut Butter) Soup

Ingredients
- 5 chicken thighs
- 1 1/2 medium onion
- A piece of ginger
- 2 tins of tomatoes
- 1/2 cup of smooth peanut butter
- 5 cups of chicken stock
- Salt
- Chili pepper
Steps
- Steam chicken as desired
- Blend onion, ginger and mix with tomatoes
- While chicken is still cooking, add onion, tomatoes and ginger mixture
- Add salt and pepper
- Cook for 5 minutes then add chicken stock and cover to cook for 25 minutes
- Add peanut butter and water if necessary
- Cover again to cook for 30 more minutes or until trace of oil appears
Can be served with rice and yams.
