Jollof Rice

Steps

  1. Fry chopped onion until it softens
  2. Add tomatoes, garlic, salt, pepper, bay leaf and stock cube
  3. Cook for 20 minutes
  4. Add rice to stew and water if necessary
  5. Cook for 45 minutes on low heat or until rice is soft and all the stew has been absolved. When cooked, rice should appear red.

Serve with fried or baked chicken and salad.
