Mofongo (Mashed Plantains)

Ingredients
- 4 plantains-(2 yellow, 2 green)
- 1 small onion (chopped)
- 1/2 head of garlic (chopped)
- vegetable oil
- Table salt
Directions
Slice all four plantains. Pour some vegetable oil in a pan. Fry the plantains in vegetable oil until they are golden brown. In a separate pan, mix one small chopped onion with 1/2 head of garlic. Add one teaspoonful of vegetable oil before you add the onion and the garlic. Heat them up for about 5 minutes. Once the plantains are ready place them in a plate with a lot of paper towels or napkins for a few minutes. This will help absorb the oil. Mash the plantains together with the cooked onion and garlic. After the plantains have been smashed, sprinkle with some table salt.
